Puffy Pizza - check it.

Okay. So..I'm totally not a very creative cook...or much of a cook at that. We were supposed to have tacos last night until Toby decided he wanted to go out to SuperMex instead. So we did. But, that meant we had a pound of ground beef that was thawed in the fridge. I did not want tacos 2 nights in a row. What to do you might ask? Google. And Google I did...3 simple words typed that led to amazing-ness. Ground beef recipes. That was it. I thought...hmm...interesting? Everyone else who made it gave it 5 stars. So tonight I made it. And it was 5 stars. In fact, it was so good, I wanted to share this recipe with you. And for those of you with kids, it is also a kid friendly recipe. How could it not be? It's pizza!!

Here's what you'll need:
1 pound ground beef (or ground turkey, sausage, whatever meat your heart desires really)
2 (7.5 oz) rolls of refrigerated buttermilk buscuits
1 can/jar of pizza sauce (14oz or more, depending on how much sauce you like...(I recommend a little more than 14oz))
2 cups of shredded mozzerlla cheese
1-1/2 cups of shredded cheddar cheese
Optional Ingredients:
Pretty much whatever you would want on your pizza....onions, olives, mushrooms, pepperoni..etc.

How to make it:
Preheat oven to 400 degrees
Grease 9x13 inch baking dish
Brown the ground beef (include any other ingredients that need to be browned as well)
Drain the grease
Stir in pizza sauce and remaining toppings, reduce heat to keep everything warm
Cut the buscuits (1st can) into quarters and scatter around the bottom of the dish (you want most of the bottom covered, but leave small gaps in between for the biscuits to puff up)
Spread the mixture over the buscuits
**at this point if you choose, you can add some cheese over this layer**
Add other can of buscuits the same as the bottom layer over the mixture layer.
Bake for 20 minutes
Add rest of the cheese
Cook for an additional 10 minutes
Let stand for 5-10 mins

Ever since we found out for sure (to confirm my suspicions) that we were having a boy, I cannot stop thinking of this song. Toby and I were driving to dinner a few weeks ago and this song came on. I proceeded to tell him I always hoped we'd have a boy just so I could play this song for him. :) He listened..patiently....didn't complain that I was playing country radio like always...then says.."yep, that would probably be my luck, I'm gonna get my payback for sure!" Gotta love it.
